Veal Chops With Tomato and Mushrooms
INGREDIENTS:
6 Veal Chops
1/4 cup olive oil
1 tbsp butter
1 small onion, diced fine
2 cups fresh mushrooms, sliced thick
1/2 cup white wine ( see hint )
1 garlic clove
2 sage leaves, fresh or dried
1 cup ripe tomatoes, peeled and diced
11 cups chicken broth
salt and pepper to taste
METHOD:
Season veal chops on both sides with salt and pepper. In a large skillet heat oil and butter, add veal chops and brown slightly on both sides turning frequently. Saute for about 5 minutes. Remove veal chops from skillet and add onions and mushrooms. Cook until onions become soft and then return veal to skillet and stir well. Add garlic, sage, wine and tomatoes. Stir and cook over medium heat for 20 minutes and if the sauce is reducing add the chicken broth. Place veal chops on a platter and pour the sauce over the top. Serve with vegetables and pasta. A nice Chianti would not be a bad idea as well!
